Creating the Mud Fudge Flavor

Chocolate cake has always had a huge fan base, but I didn’t want to just create any chocolate cake with cream. If I was making a chocolate cake, I wanted it to be authentically chocolate.
That's how the Mud Fudge has been a Delcie's classic since Day 1.
I have never considered removing this cake from our menu because of how high the demand is for this cake. Customers, especially the regulars, always come back for more each year.
The original recipe for this cake was quite drying when eaten cold, which was why we always advised customers to eat the cake warm. However, I wanted to ensure that our cake could be enjoyed at any temperature without compromising its taste and texture. This led to my team and I to constantly improve the recipe, making the cake lighter and moister.
Now, customers can enjoy the Mud Fudge Cake at room temperature, warm, or cold, with the intended taste and texture preserved.
Back then, bakers liked to use glucose syrup, which has a high GI, in their chocolate cakes to make them very shiny. Unfortunately, this made them less diabetes-friendly.
I believed that Delcie’s could be the first bakery to offer a certified diabetes-friendly chocolate cake. Since chocolate itself also has a high glycemic index, it was important to find a solution.
For my recipe, I used 74% dark chocolate, removed all the diabetes-inducing ingredients, and sent it to the lab as the first cake to be tested if it's diabetes-friendly.
I was thrilled when we received the certification. This certification allowed us to show Singaporeans that cakes can indeed be made healthy.
