Creating Gluten-Free Vegan Mooncakes
Gluten-Free mooncakes were something I only developed many years after launching our traditional vegan flavors White Lotus Black Sesame and Pandan Lotus Salted Mung Bean. This was because, as the years went by, we had a growing number of customers requesting gluten-free versions of our mooncakes.
Seeing that it was a good opportunity and timing for us, and a product that would satisfy our gluten-sensitive customers, I decided to embark on this gluten-free mooncake journey.
Crafting the Perfect Bite
While snow skin mooncakes are naturally gluten-free, I wanted to offer a unique baked option.
Even though snow skin mooncakes are gluten-free, it also depends on how the chef prepares it; whether preparation is done in a completely gluten-free area.
Committed to providing safe desserts, at Delcie's we use the highest standard of gluten-free production. This means separate preparation areas, tools, and processing to ensure a product has a lesser risk of cross-contact.
For the filling, we were set on red bean as it had a distinct flavor profile that I liked. I also didn't want to replicate our existing vegan mooncake flavors into a gluten-free one as I wanted to provide a greater variety in our offerings for our customers to choose from.
Creating the baked skin was a difficult process. Since it was gluten-free, the skin was unstable and tended to stick to the molds. It was one of the biggest problems I faced developing this particular mooncake. In the past when technology wasn't as advanced, we only used a special silicon mold to shape the mooncakes as it was the only thing that prevented a mess.
However, as technology improved and we had greater access to quality ingredients, we started changing and refining our recipe to what it is today.
